Parmesan Crusted Salmon with Fresh Tomato Sauce

For a Crunchy Parmesan Topping...

You will need…

  • 60g fresh white bread crumbs
  • 60g freshly grated parmesan
  • 30g toasted pine nuts
  • 2 tbsp finely chopped basil
  • 60g butter, melted

To prepare the Crunchy Parmesan Topping…

1. Place all the ingredients into a food processor until just combined.

For the Fresh Tomato Sauce...

You will need…

  • 3 medium-sized fresh tomatoes, cut into quarters
  • 1 garlic clove
  • 1 tsp sun-dried tomato paste (or normal tomato purée if you prefer)
  • salt and ground black pepper to taste

To prepare the Fresh Tomato Sauce…

1. Place all the ingredients in a blender until it almost resembles a purée

2. Sieve to remove the seeds

3. Bring to a boil and simmer uncovered for 4 minutes, stirring occasionally

4. Season and set aside.

For the Crusted Salmon...

You will need…

  • 4 Fresh Salmon Fillets

To prepare the Crusted Salmon…

1. Grill the filets of salmon for about 4 minutes

2. Turn the salmon over

3. Top with the breadcrumb mixture

4. Bake for an additional 4 minutes or until cooked through.

Serve the crusted salmon with spoonfuls of fresh tomato sauce.

Serves 4
